Flageolet beans (Phaseolus vulgaris) are immature kidney beans that have been removed from the pod while very young. Flageolets are about 3/8 inch long and range from pale pastel green to pale ocher to white. Flageolet beans have a delicately tender and famously creamy texture with a light and fresh taste. This bean originated in the United States but was brought to France where they are cultivated and are more commonly used.

Cooked flageolet beans tossed with lemon and fresh herbs are a delightful side for fish, meat or poultry dishes. This bean is famous for French cassoulets of lamb and vegetables.

Soak them overnight in water; put them in boiling water; reduce to very low setting and let them cook slowly until tender. You can cook them with lamb stew, it adds a wonderful flavor to them and you will have a wondeful dinner!
