The classic blues have been the inspiration for numerous other cheeses since their creation thousands of years ago. We are particularly fond of the three we have selected for this cheese board, each a slight twist on the classic theme. Cashel Blue comes from Ireland. It is made from pasteurized cow's milk using vegetarian rennet. The texture of Cashel Blue is delightfully creamy, and its flavor is true blue, but slightly milder than its classic role models. Roaring Forties Blue is a new blue from Australia, made on King's Island. It is deliciously sweet and creamy. Berkshire Blue is made from whole, unpasteurized Jersey cow's milk. This artisan cheese is made in small batches, starting with only 60 gallons of milk. Its production is done completely by hand, and by only one person. It is hand-stirred, hand-ladled and manually turned, resulting in an exceptionally creamy, smooth blue. (This gift includes a stunning and durable bamboo cheese board. Each of these cheeses was great - but not for the faint of heart with their bold blue flavor - but the winner for me was the Cashel blue. Open a bottle of port, have your friends over, and you are set for a great night!
