I liked the flavor and texture of this product, but it seemed to "cook down" quite a bit, so you get much less in the end than you think you will. However, the final product was nice, not as fatty as pork bacon, with a better flavor than turkey bacon.

Duck bacon cooks very quickly, has a very interesting texture, but, most important, tastes fantastic. The only caveat is that once opened, you need to finish the product quickly as it has a very short shelf life. Even vacuum sealed, it doesn't last long in the fridge -- a couple of weeks, at best. So buy it, eat it, and enjoy!
