The spoonbill, also called the paddlefish, is a peculiar, prehistoric fish that thrives in the waters of the Mississippi. It is a member of the sturgeon family, so its caviar is like that produced by the more famous Caspian Sea sturgeon, albeit at a much more affordable price. The spoonbill's caviar is quite delectable; rich, robust and creamy with small silvery pearls.
