The spoonbill, also called the paddlefish, is a peculiar prehistoric fish that thrives in the waters of the Mississippi. It is a member of the sturgeon family, so its caviar is like that produced by the more famous Caspian Sea sturgeon, albeit at a much more affordable price. Paddlefish Sturgeon is steel grey with a small bead. It has a fresh seabreeze finish. Serves 2-4 people.
