From master charcuteriers, Fabrique Delices, comes this exceptional dry-cured saucisson. Made with ground pork, black pepper, and spices, their saucisson sec is then aged in a natural casing that is then covered in a bloomy white casing of penicillin mold. Originally this mold, or white flour, was used to keep the sunlight directly off the saucisson as it was hung to dry, as the sunlight could cause the fat to go rancid. Along with protecting the saucisson, it intensified and concentrated the flavor, making a great product even better. Enjoy this saucisson with a large wedge of aged sheep's milk cheese, a bit of pâté, and your favorite jar of chutney for a delicious meal.

This saucisson is shelf-stable, only needing refrigeration after being opened.

I have been looking for a REAL Saucisson Sec. I used to import them from France (even if....) But now I can order it here in the US and enjoy it. I will recommend it to anyone who loves dry saussage.
