It is a delicious sausage. We eat it with slices of top quality Parmesean. My husband could eat a whole sausage by himself if allowed.

I was dissapointed with this sausage. It was dry and hard. The flavor had an almost "raw meat" charactaristic about it. This was supposed to be the sweet variety.

I ordered the red pepper which I thought would offer a bit of a bite to the overall flavour. This is not the case. I barely detected any hint of pepper. The texture was smooth, but waxy and extremely meaty. Not a whole lot of spice or other flavours come through but just a bite or two is satisfying. This little salami goes a long way. I used half for hors d'oevres and the other half finely diced with warm white beans, olive oil and garlic. The overall flavour definitely improved in that dish.
