Located in:Meats/Seafood, Cured Sausages
Fourteen year old P.G. Molinari arrived in San Francisco in 1884 from the Piedmont region of Italy. He went to work in the first salame factory established in San Francisco, A Chiesa, where he became a foreman. In 1896, he opened his own store where he continued the traditional art of sausage-making. Today, P.G. Molinari and Sons is still family owned and still continues to make fine salames and Italian sausages of all types. Their dry salame is made from a finely minced mixture of pork and beef with their own custom blend of spices.

My husband and I love dry salamis but this one tasted like mold and the meat itself had such a mild flavor that it was disapointing. Threw it all away.

This is THE WORLD'S BEST Salami. The salami of my childhood. The salami that represents all salamis. Sliced thin for sandwiches, or for home made pizza, in salads, you name it. Whatever you have a salami need for, this product will fill it.

Overrated and quite bland
By Chef TimmyVerified Reviewer from Overland Park, Kansas on 8/1/2007
Cons:
Bad Flavor, Bad Texture, Excess Fat
Best Uses:
Hors d'oeuvre
Describe Yourself:
Foodie, Frequent Diner, Health Conscious
Bottom Line:
No, I would not recommend this to a friend

Very disappointing flavor and texture. This sausage is overpowered by the mold on the outside from the curing process. I would not purchase this sausage again.

igourmet Response: The white mold on the exterior is sprayed onto the salami on purpose, just like Brie cheese. It does not form there naturally, and is there to protect the meat from unintended spores.

Haveing moved from the San Francisco area to Knoxville there is no dry salami so I found this to order. Columbus is a brand carried by stores in SF area and I think this is by far a better salame.
