This rich, flavorful, French style duck salami has an excellent balance of seasoning and flavor as well as a pleasant moist texture. The duck meat is blended with fresh garlic, sea salt, and black peppercorn in an all natural pork casing, cured 45 days and then hand tied. Tote some along on your picnic, slice one up as a fancy snack, or use as part of an antipasto platter.

Wow, this stuff is fantastic. Once it comes back into stock I am buying several orders of it! Magnificent flavor... I admit I was worried about the texture when I ordered it for the first time but that turned out to be quite good. As other people have noted it is a bit fatty, but that is part of what makes it so fantastic. This sausage is definitely worth a try.

I've been enjoying all of the duck products I've seen come to market the last several years. From duck prosciutto to bacon and iGourmet's Duck Salami. If you're watching your fat intake this is not the salami to get, but if you want a rich and flavorful salami from an alternative source, duck may be for you. The spices are aggressive, but so too is the dark meat flavor of duck so the duck is not overpowered. Instead a nice balance is struck between all of the flavors. I served this salami as part of my annual Winter Solstice fete and opted to make sourdough crostini to serve along side. The toasts were a good foil to the fat. Get a whole grain bread if you're feeling particularly guilty.

I purchased this for the first time and found it to be a nice change from the everyday summer sausage. I just cut it up and had it with a number of different cheeses. The draw back is the large amount of fat. If your trying to keep that to a minimum, you'll have some trouble with this product. The meat itself was very tasty if you like duck you'll really love this.

I don't like any kind of sausage, and yet I completely agree with everything the first reviewer said. Do not waste this product on mustard or bread; it is divinity personified all by itself. It does indeed get its flavor from duck fat, of which there are good-sized specks throughout, but also big bits of peppercorn that add a nice bite. If you like duck, buy it! The amount of such a delicious product you get for the price is totally reasonable. It is best, however, if you don't look at the calories per serving on the back...

Throw your calorie counter away! This wonderful sausage unapologetically relies on duck fat for much of its flavor; and boy what flavor! Mildly spicy, soft to the point of tender, best on its own (in my opinion). Take a chance if you love duck like I do.
