Chistorra is a classic sausage from Navarra, Spain, a stunning area that borders with France, the Basque country, and Aragon. La Chistorra is prepared over burning coals and is made with pork, paprika, and garlic. Similar to chorizo, but longer and thinner, it is delicious boiled, broiled or fried. A must for paellas or stews. It recreates the perfect Spanish omelette (tortilla) or serve it on its own, tapas-style.

If you like Chorizo but think the smokiness sometimes overpowers the other flavors, this is for you! This is just like chorizo but thinner and more tender with a more subtle smokiness in the backgound. It's like chorizo but with all of it's problems solved :-)

I really love the garlicky and smoky flavor, and that all it needs is a little frying. It is a bit too oily, but that is something I can live with, given its great taste.

If you have been to Navarra in Spain you will remember how well these people eat. Nothing overly fancy, nothing complicated or fake, simply straightforward and good products. I cannot imagine how anybody would attempt to improve the distinctive flavor and texture of this fine sausage. It is hearty, meaty, and well-rounded. The spicing is perfect.
