Coppa is a famous Italian sandwich meat, characterized by its distinct and very special flavor. Siena's Coppa is made from first choice pork shoulder, then salted, flavored and dry-cured for at least six months under strict control. Firmer than prosciutto, coppa ham is best sliced thin and served with a lively mostarda. Coppa is frequently used as an ingredient in omelets and is a great addition to the antipasto plate as well.

I was disappointed in the Coppa. It was very grizzly and hard to chew. It also had a lot of fat in the meat which wasn't appealing. I've had Coppa in deli sandwiches before and the deli Coppa was easy to chew and had a lot more meat than fat.

It is difficult to find European cured meat products because of health restrictions, but this Coppa from Canada is very close to the original. Tender, tasty, not too salty.
