Tasso Ham is a Cajun specialty - a lean piece of cured pork (usually shoulder) richly seasoned with red pepper, garlic, file powder and several other herbs and spices, and then smoked for two days. The result is a firm, smoky and flavorful meat largely used for seasoning. It is most often finely chopped and used to flavor foods such as beans, eggs, and pastas. Makes a great addition to Jambalaya; adds flavor to collard greens; or use in white tarbais bean ragout.

This ham is fabulous. I missed tasso when a local New Orleans cuisine restaurant went out of business. I used this in a recipe with spinach and pasta in a cream sauce. Wow. I can't wait to use the remainder of the tasso in a quiche. I can't say enough about this ham. It is not overly hot and spicy - just right, to my taste.

This is essential in Cajun cooking, but you should know that it is so hot it's not edible on its own. It is used only as a flavoring. I love/crave spicy food but this is so hot I can't handle more than two small bites.
