My friends and I were back in Spain as we ate this delicious ham so typical of Spanish culture.

I love Serrano ham on bread rubbed with tomato and a little olive oil. Also on salads; with cheese; wrapped on chestnuts or figs; again, the possibilities are endless.

Short of slicing your own from a whole leg (not an option for most of us!) this is as good as it gets for Serrano lovers here in the US. Has that melt-in-the-mouth quality despite its age, and is also great in spanish omelettes, wrapped around asparagus etc

This serrano was tender and flavorful when I received it. Sometimes I find store-bought prosciutto to be too salty and have a "jerky"-like texture, but this was just the opposite. The meat was paper thin and wrapped easily around cantaloup. It was deliciously porky!

I returned from Spain recently (July '07) looking for the kind of fresh-off-the-leg Iberico and Serrano Jamon I'd eaten every day for the last two weeks. Hoping this was it, I ordered three packs. I used the word "glassy" to describe this ham -- it's so vaccuum packed and has been for so long, that the sides of the outer pieces are actually smooth and *reflective!* You're only supposed to be able to see yourself in your stainless steel pans, right? This Jamon was also leathery, which can sometimes be nice in small doses, but this was tough -- too hard for sandwiches and not nearly high-quality enough to serve plain on a plate with cheese.
Spend your money on authentic slices if you can find a Spanish (not Mexican!) meat store near you (or fall back on the best Prosciutto you can find).
