Calabrese is named after a region in Southern Italy. This coarsely ground pork salami for sandwiches and antipasto is mildly hot, due to a generous addition of red pepper flakes. Made in Canada to exact Italian specifications, it is pressed into a flat shape during curing. This pressing not only gives Calabrese its characteristic shape, it also gives it a wonderfully firm texture. I purchased this salami for the first time, and I love it. It's hot, so you need to cut it thin, and it's excellent for sandwiches. I also eat some slices between meals, as a snack. It's a hard salami (as a salami should be), not chewy.

I bought this primarily for myself for snacking and sandwiches since I am the only Italian-American around in my community. But I served it as a pre-dinner party snack and my guests all raved about it! It's increased my standing as a great hostess! Though not for the faint of heart when it comes to spicy, Texans, on the other hand, loved it.
