The first time I tried these I used them in a Mario Batali recipe that garnished them with a simple tomato sauce -- with the sauce they came across as plain and uninteresting. But I tried one un-sauced the next day and discovered they are absolutely delicious without adornment. These are now my favorite sausages of all time. Be careful not to overwhelm them with strong flavors. Greens and potatoes are good accompaniments.
