Comments about Prime Rib:
We have a prime rib roast for Christmas dinner almost every year. This year, my family was most disappointed with the roast I served. I usually buy a Prime grade roast rather than a choice grade but I thought I would give this one a try because it was from naturally raised cattle. I slow-roasted it, took it out while it was rare (125 deg.) and let it rest for 20 minutes while I put the final touches on the dinner. The meat lacked flavor and was very chewy. Back to Prime grade meat next year.

We always serve prime rib for Christmas dinner and special occasions. Last year I purchased the prime rib from a competitor. The product served about the same amount, however, it was more costly and did not have the same premium taste of this cut. My husband is Italian and food is everything to him. Prior to dinner, he was not excited at all about what we were serving and I think expected a dry,bland piece of meat. He had several pieces and raved about it as everyone else did. In fact, he still talks about it being the best Prime Rib he has ever had even in the best of restaurants whenever the subject comes up.
