Ortiz has launched the first premium White Tuna with a year of aging: Bonito Del Norte Family Reserve. Like a good wine, it is kept to age for at least a year in their Spanish cellars after packaging. White tuna is a traditionally prepared Ortiz specialty; the exquisite flavor of the best white tuna is enhanced by the silkiness of the olive oil. This stands as yet another step forward in Ortiz's search for excellence, as the taste and aroma of white tuna improves over time, gaining both flavor and smoothness.

White tuna is found in coastal waters of the Bay of Biscay during the summer season. Ortiz maintains its longstanding quality controls as one of the premier fisheries in Spain. The fishermen at Ortiz maintain the same methods of fishing as their forefathers, in a sustainable manner to ensure the health of the Cantabrian coast that provides their cherished products.

Comments about Ortiz Bonito Reserva: Aged White Tuna in Olive Oil:

A very good grade tuna in oil, but does in no way meet the stated description. It is just as good as the other Tuna olive oil, but could find nothing to indicate the "year in their cellars" Given the price of the tuna I would suggest other tuna's packed in olive oil.
