Stuffed goose is a staple for us for my hubby's B-day dinner party in late December. But had a hard time finding a goose at any of the local markets this year. Ended up finding Igourmet in a last ditch effort to find a supplier online. And what treat it was! The goose arrived fresh [...] and directly from the farm and kept well in the fridge until ready to cook. I was impressed by the absence of excess fat I had encountered with locally purchased geese before and found that to hold true during cooking, as trhe drippage of goose fat in the pan was much less compared to previous experiences. Most importantly, once cooked the meet almost fell right off the bones, was moist, succulent and flavorful and complemented its acompaniments of red caggabe and mashed potatoes perfectly. Needless to say, there were a lot of accolades from our party guests and the goose disappeared in no time!Will definitely order my next goose from Igourmet based on this experience!

It taste much better than turkey!!! the fat and skin are edible and usable !!! The liver is another delikate and gourmand item. The meat is juicy and tender, the soup tastes excelent and so the pilaf made with soup anf giblets, hungarian style. You can smoke the whole bird for cold cuts!!! The breast meat grinded makes a great meat loaf or meat balls, perhaps cabbage rolls!!!
The use of it is endless, to bad is not a popular bird in the american supermarkets, at least not in Phoenix, Arizona.
Only a matur bird is tasty!
The young ones traditionaly in stores freezers are not good at all because are underdevelopped yet!!! they don't have any fat or a big fat liver only thick bones and skine, without taste :-((((((
Nothing under 18-20 pounds is acceptable!!!
