Originally of South American origin, the Muscovy duck is very thin skinned and low in fat, almost 40% leaner than the more common Pekin ducks. They are grown out 12 weeks to ensure consistency in weight and tenderness. The rich flavor of the Muscovy duck makes it excellent for roasting.

Cooking duck is difficult because if it's not high quality it can become dried out. When I cooked Muscovy Duck I became CONVINCED that I'd cook it again. It was WONDERFUL!
