Grown on the hills of Modena, Trebbiano grapes are perfect for making quality balsamic vinegar. This traditional balsamic is taken from Modena grape must. After being boiled over an open flame, the must is placed in wooden casks, filtered, and transformed into balsamic vinegar. These casks are stored in a vinegar loft (acataia) - where for over twenty-five years, the balsamic vinegar matures.

With its ingredients, time, and expertise, balsamic vinegars of this quality are extremely hard to find.

This balsamic is great over smoked salmon wrapped mangoes on a bed of arugula, and on the now-popular tomato-buffalo mozzarella-basil salad. It is very syrupy and thick.

Received as a mothers day gift and just had to pass along my rave review! I've tried many many balsamics in mytime, and nothing has compared to the depth here, and the subtle, nuanced undertones. Utterly fantastic and a real treat. Will buy as gift for special occasions.

I've bought many expensive Balsamics over the years, from many companies, and nothing compares to this. When my family visits from Roma, they are amazed I'm able to purchase such authentic items here in the US. Deep rich incredible flavor, and of course a little goes a long way. Also makes a fantastic gift. Thanksyou for carrying usch items!

Very disappointing. Very bitter and tasted like burnt Caramel.

Perhaps I just got a bad batch but I can't think how some poeple claim they put this on Ice Cream.
