Olio Carli's pure olive oil has a natural, mellow and sweet taste and a fragrant bouquet. It is the highest quality pure olive oil you can buy, with less than 0.3% acidity and not less than 25% Extra Virgin Olive Oil. All competing brands of pure olive oil are a blend of Extra Virgin and refined olive oil, but most contain 5% or less Extra Virgin and very few brands even specify blend proportions or the acidity content. Carli proudly declares these facts on every label of its 100% Pure Olive Oil. Incidentally, Carli's is Italy's best-selling pure olive oil, notwithstanding the fact that it costs more than practically every popular brand of Extra Virgin olive oil and the minimum purchase quantity in Italy is six liters. In the U.S. however, igourmet allows you to buy just one.

Whereas Extra Virgin olive oil is best as a salad topping or a dip for dinner bread, pure olive oil excels as an ingredient in whatever you may be cooking. Try it as a base for a great marinade or in the pan for a wonderful omelette.

(1)This is a wonderful olive oil. Its low acidity makes it a great combination when used with Carli Balsamic Vinegar of Modena. This combo can be used as a dipping agent when used with Garlic Bread. (2)This combo also makes a great salad dressing.
(3)When you fry eggs in this olive oil you won't believe what happens to your taste buds. You should keep the oil at a low temperature and fry the eggs slowly.
(4) I also use it to fry shriimp by adding minced garlic and butter to the olive oil. Incredible!!!

This is a great oil for those who don't care for a strong flavored EVOO; The quality is that of an EVOO with a much lighter and delicate taste. There is not another Pure Olive Oil that even comes close to this in quality.
