In Italy, Carli Olive Oil has always only been sold direct from the factory to the consumer. A fleet of over 100 trucks assures prompt direct delivery to more than 700,000 families, over 120,000, of which have been loyal customers for two or more generations. Why are Italians so religious about their Olio Carli? For one, no oil from pomace or any source other than fresh ripe olives is ever used in the production of Carli Olive Oil. Secondly, although the strictest legislation allows a maximum acidity of 1% in Extra Virgin Olive Oil, the maximum acidity allowed by Carli in its olive oil is 0.3%. Olio Carli has been honored frequently at national and international expositions. Embossed on the label of these fine oils, you can read the following distinctions:

Extra virgin olive oil is the best oil to use if you are health conscious. And this olive oil is superb. I have family in Italy and in France and they ALL buy olio Carli. We use it everywhere: on pasta by itself, to make pasta sauces, to cook meats, on salads, for dipping, even for frying.

This oil is our favorite for salad dressing...we just use it and Balsamic Vinegar and we are having a lite and delicious dressing....we started using this oil after a trip to Barcelona....they serve only oil and vinegar on the tables and it is so much better for you! This is our second shipment. Last time you had the large bottles...wish you still did!

When visiting Italy a few years ago, we toured Fratelli Carli and tried their wonderful oil. Their Museo dell' Olivo is definitely worth a visit if you're near Imperia. We brought some oil home with us and, when we ran out, we were delighted to find that igourmet carries it. The extra virgin is great for salads, pasta, and other uncooked uses. The pure is terrific for cooking.
