The word deciso in Italian means "determined." A fitting description for this new Extra Virgin olive oil from Olio Carli. Deciso is the result of the Carli brothers modifying the recipe of the original sweet, yet subtle and oh, so fruity original Olio Carli Extra Virgin. This is one of two oils you will always find by our stove. It is a versatile oil.
We use it on lighter pasta dishes, such as angel hair with basil, when the oil has to carry it's share of the overall flavor of the dish. Also in recipes for pancakes, cooking veal, Steak Romano , etc. Yet it will hold its own against our finer oils when used for dipping. Lookout when this oil comes back in stock because I am ordering a bunch! I am NOT getting caught short of this "essential oil" again.

Ok, so originally I gave this a so-so review, and since using it, I've changed my mind and decided to rewrite my review. It's quite good on pasta and am ordering more.

This is a very distinctive olive oil with a character of it own. I know of no other olive oil on the market that can compare to the color, fragrance and the taste of this fine oil. I use it in just about everything. My favorite is a lemon vinaigrette. The color when used with fresh lemon juice, lemon rind, shallots, salt, pepper, & champagne vinegar almost looks like lemon curd.

After reading the reviews from their site and from users, I decided to try it. Although the flavor is bright, fresh and green, it wasn't the type that I prefer which is more on the nutty side. I am still a big fan of James Pagnol olive oil from the south of France and will continue to look for it.

I am not sure it deserves all the accolades--it's nice enough though

There's nothing better than dipping fresh bread in this incredible olive oil. It's flavorful without being overpowering. Another reason that Olio Carli is the only olive oil we use.

This product was introduced to me by my son who lived in Italy for 6 months. During his fellowship there, he commented that the chef ALWAYS had the Deciso olive oil on the table .
