DOP olive oil from Liguria must be made only from the taggiasche olive, an olive native to this part of Italy. A smaller olive with tremendous flavor, the taggiasche has hints of almond and a very fresh quality. An oil for those who crave the best the world has to offer, Olio Carli only makes very limited amounts of their DOP, with each bottle numbered serially. For their DOP oil, the olives are hand-selected and hand-pressed. Enjoy this superb extra virgin drizzled over steak, salads or especially fish.

I use it on just about every thing we eat.
I bought this EVOO based on the description and have been quite satisfied. It like to use it for adorning pasta and for salad dressings. This one is too good for everyday cooking.
Besides being a wonderful dipping oil, I drizzled it over some Copper River Salmon I grilled on a cedar plank - incredible!!!
This oil is really yummy used as a dip for bread with herbs or basalmic, or just plain. Also adds much to pizza, salad or drizzled on fish or on pasta with fresh pramesan. Highly recommended.
I use this on salad make my own dressing it's wonderful, I eat salad every day, it's great.
I'm Italian and in Italy this is the only Olive Oil that my family uses. They sent a case to me for Christmas years ago and now I won't use anything else. I have given this as gifts and I've been told that this Oil far surpasses any other high end/expensive olive oil on the market. It's wonderful
This is an incredible finishing oil that enhances anything you add it to. It's especially good drizzled over fish. This oil is too good to mix with vinegar. It deserves to be used alone! Buon appetito.
I only have good things to say about this product. My guests always comment on how delicious my salads are when I use this EVOO. It adds a subtleness to all foods without being overwhelming. I compare it to a flawless diamond.

This is some of the best olive oil we've eaten and it's wonderful with the balsamic vinegar!
The only ligurian olive oil I have been able to find in the U.S. We love the light taste and texture. It is the only olive oil we use now.
