I got this oil mainly to flavor deviled eggs; this is something numerous high-end restaurants here serve as finger food, and I like the deliberately downscale/upscale idea of such a homey item perfumed with truffles. I now realize, though, that the truffled deviled eggs I liked best must have used white truffle oil. This black truffle oil lacks the complexity I admired; it's earthy indeed, but almost too earthy-- and definitely more one-dimensional than white truffle oil. I.e. it's better as one flavoring agent among several than used alone. And definitely take seriously the advice to only use a few drops! All that said, it's useful. It added a lux taste to a pasta with ordinary mushrooms, and was excellent in a different pasta with walnuts and arugula, nicely balancing the greens' bitterness.

It tastes so buttery with that distinctive truffle flavor. I also like using it on fresh mozzarella and sliced tomatoes salad and on toasted baguettes as well as on meats before and after cooking.

I usually like truffle oil but I found this one too close to garlic in its overall flavors. The positive is that the basic oil itself is good quality and the flavor is very intense indeed, but the negative is that to us it was overpowering (even as a very few drops)rather than delicate or life-enhancing!! Others may perceive it differently
