In addition to growing grapes and making wine, many family owned wine estates in Tuscany also grow olives and produce olive oils. The Gimelli family continues this tradition to impressive results at Pietra Santa. Italian for "Sacred Stone", Pietra Santa was named such for the rich limestone deposits in the vineyards sub-soil. California producer Joseph Gimelli imported 5,000 olive trees from Italy and has planted an olive grove on his estate just above the vineyards. Pietra Santa's unique system integrates the quality advantages of traditional stone mill crushing with modern three phase decanting, centrifuge, and separation processes.

"You plant grapes for your children and olives for your grandchildren" is a popular saying in Tuscany and one that can easily be applied to this incredible oil. Inspired by the bold flavors typical of Tuscan Oil, this Primo version has decidedly a little more spice upfront than Pietra Santa's other variety. Building on the same smooth fruity base as their other oil, this gold medal winner has a more assertive character for those of us who like our oil with just a little more bite, and comes in a beautifully stylish bottle which also makes this a wonderful gift.

This is a deliciolus oil from California. It has a little bit of spice to it but does not burn the back of your throat. It is also in a beautiful bottle that makes it wonderful for gift giving!
