The unique flavor and limited production of truffles command a price of up to $900 per pound, depending on the type. A superb way to capture their flavor and extend their use is to make truffle oil by soaking them in olive oil. Truffles grow underground and range in color from almost black to off-white. The white varieties have subtler flavors than the black truffles and lend extra virgin olive oil an almost garlicky flavor with full, earthy overtones. The white truffle is in season from September to December and is also used raw, thinly sliced over pasta, risotto, or omelettes. It has a very strong, pleasant aroma.

Truffle oils are generally not used in cooking, as the heat adulterates their flavors. Instead, they are added after a dish is prepared or used in salads and other cold dishes.

I loved the price of the product. It had a wonderful aroma but the flavor fell flat.

I have tried multiple truffle oils, and all have thus paled in comparison to this bad boy. More potent than a Spanish sailor on dock day, you can not go wrong with this product. Give it a whirl with pea soup and some grated Parmesan.

Hi All,

I bought this to give the finishing touches to soup. I made a veggie root soup and finished it off with a few slices of freshly roasted chicken breast and this oil. It really made a simple dinner special. This oil has a strong smell and should be used sparingly for my household. Hey and I got my teenagers to eat veggie soup yea.

After sampling this in the store in Florence, we bought a bottle to bring home. Now that this bottle is almost gone, we will be ordering two more! Excellent flavor, need very little...just awesome stuff!!

i've had limited experience with truffles.... but this is over the top..... all of the flavor without the cost..... something as simple as a grilled cheese brushed with this oil is a masterpiece.......
