Champagne vinegar is exclusively produced in the Champagne region of France. Just like Champagne itself, the vinegar has millions of aficionados in France and other countries. Considered the “king of vinegars” in France, its production process is unique and includes a carefully monitored aging in small oak barrels. Incomparably smooth and subtle, this light and mild vinegar is a good choice if you want to dress delicately flavored salads or vegetables (especially asparagus). Makes a great dressing with Dijon mustard, garlic,shallot, extra virgin oil,salt and pepper on Boston, Bibb or other mild lettuces.

BECAUSE OF THE DELICATE FLAVOR AND ECONOMICAL PRICE IT WORKS WELL WITH CRABMEAT IN WEST INDIES SALAD. I FILL A LARGE JAR WITH CRABMEAT,BAY LEAVES, CAPERS, ONION,OLIVE OIL, VINEGAR AND WATER. IT WILL LAST FOR WEEKS IN THE FRIG IF NOT EATEN FIRST. NEXT IS PICKLED SHRIMP, THEY ARE DONE SAME AS CRABMEAT.

Never had any Champagne vinegar before except American versions. I now know what I've been missing. Makes a beautiful dressing and product is a great value. Have since noticed that several American "sparkling" vinegars are more expensive per ounce.

We eat a lot of salads and vegetables along with a very moderate portion of our favorite meats, fish and poultry. This champagne vinegar adds a "special" flavor to various dressings and marinades. And the price is reasonable.
