This rare gourmet vinegar from Cadiz in the south of Spain has been aged in oak barrels and is considered one of the oldest vinegars in the world. The “Solera” aging process allows for a limited release of 6,000 liters each year, proudly presented in these small bottles, wrapped with yellow cellophane. Solera refers to a system of topping off older wines with the more recently made sherry. The Spanish are the experts at using this method and are thus able to produce consistently high quality sherries year after year. Vinegars made from sherry have an especially well-rounded flavor among wine vinegars.

I have used this sherry vinegar many times for various salad/sandwich dressings. Always blends well. Smooth flavor and aroma makes the dressing quite tasty and pleasing to the palette.

I purchased this for a gazpacho salad. I made it first with balsamic and it was pretty good. But when I used this vinegar, it was fabulous!

This is the most flavorful vinegar I have ever used. I use it sparingly, but when I do... the creamy rich flavor of the sherry comes through with just the right bite

Enhances flavors in marinades and pan sauces. Orential cooking with pork as a base compliments this vinegar well. Not for those who do not like the essence or taste of a strong sherry vinegar - this is not a mild vinegar so use wisely. Excellent product.
