Cava, the Spanish equivalent of champagne, is a wonderfully crisp, dry, and yeasty sparkling wine. It is produced near Barcelona by the artisans of Agusti Torello Mata. Once matured, the wine ferments another five months in American oak barrels followed by a year in French Oak. Only then do the acetic notes become more pronounced and begin to smoothly harmonize with the fruity aromas of their vintage Cava.

Cava Vinegar is an ideal partner for vegetables, fish, quality meat, and to season any Mediterranean dish. A few drops enhance mature cheeses and accent the sweetness of ice cream.

A distinctive taste so be careful not to use too much. A small amount goes a long way. However, once I tried it I found I cannot be without it in the kitchen.
