For 120 years the LeBlanc family has been producing oils and vinegars through age old techniques passed down from father to son. Based in the town of Igeurande in the southernmost corner of Burgundy, France, they have handed
down their trade secrets based on the watchwords of authenticity, tradition and nature, flavour, gastronomy and sophistication.
Their Champagne vinegar comes from the region of Champagne Ardennes in the north-east of France. The unique micro climate combined with the chalky limestone soil (which assures perfect drainage, preserves humidity in the soil, and supplies mineral elements to the vines) gives Champagne wines their unique characteristics. Champagne Vinegar is made from the sediment of Champagne. It has a crisp, acidic, light flavor and a nuance of vanilla the the oak barrels it is aged in. This delicate vinegar enhances salads, marinades and sauces.
