The Balsamic Glaze® by De Nigris is a special thick cream made with Balsamic Vinegar of Modena as the main ingredient. This glaze was introduced as a response to numerous requests from professional chefs. Often finding themselves reducing the balsamic vinegar over the stove to obtain a thick sauce or a cream for decorating, they are able to decant the glaze directly from the squeeze bottle. Brush on meat, scallops, or vegetables before grilling, or use to decorate the plate with professional swirls of balsamic glaze on special-dishes.
The history of the De Nigris Company began in 1889, when Armando de Nigris founded the first vinegar works in Naples, Italy. Surrounded by the rural farmlands his whole life, his passion for the earth's bounty made way to the production of vinegar on a commercial basis. Armando's success in making and supplying red and white wine vinegars was further expanded when his son, Marcello, joined him and the company began to make balsamic vinegar and sell it to shops and manufacturers. The condiments produced by De Nigris offer an alternative to the typical wine vinegars or balsamic vinegar found in the market. Used in classical dressings or as a marinade, they impart the special and unique flavor to the dish being prepared.
