I bought and tasted the five Martial Picat mustards: Dijon, Fig, Green Peppercorn, Provence Herbs, and Tarragon. If not the best of its type, each is among the best of its type. Fig is a surprise: mustard and fig make a mellow blend with neither mustard nor fig standing out or clashing with the other. Green Peppercorn lacks the green peppercorn perfume of the classic Pommery, but has a fresher taste than the Pommery. I detect no horseradish in the Provence Herbs, unlike another reviewer, which is a good thing for Provence Herbs. Martial Picat is your best choice if they make the type of mustard you want. Each type is based on the world's best mustard, Dijon, whether the result is pungent or mild.

I ordered the herbes de Provence variety, thinking it would be like a previous product with this description. It has too much horseradish for my taste, but my husband, who loves horseradish, thought it was fabulous. If you like the strong flavor of horseradish, you will love this product. It definitely isn't for the faint of heart! A cautionary note -- use sparingly at first to make sure you like it.
