The Radici Organic Farm lies on the slopes of Pratomagno, the high valley above the town of Loro Ciuffena, named for the Ciuffena River that flows through the middle of the town in a precipitious stone-lined canyon, gives life to the 800-year-old mill where Radici mills its chestnuts into flour. Loro comes from the laurel or bay leaf tree famous in this richly historic and naturalistic part of Tuscany. Sandra Masi, Vivano Venturi and their four children vigorously work their own fruit groves, vegetable fields and nearby natural chestnut woods to make jarred products of exceptional quality and originality.

Chestnuts from the Pratomagno woods are unique to this region of Italy, possessing flavor qualities not found in normal hybrid or domesticated plants. After chestnuts are hand gathered, they are wood-roasted and made into these artisan spreads. The chestnut-orange sauce has just the right touch of orange brightness with a hint of brandy and is excellent on cakes, breakfast pastries, in desserts or crepes, and is a perfect match with pecorino cheeses. The chestnut-chocolate rum sauce is rich and sinful with a hint of rum and is perfect on ice cream, toast or bagels, cakes, desserts or crepes.

We like to heat it a little before placing on crepes. It is sweet and you don't have to use a lot to enjoy the flavors. You may want more than one jar on hand.

I love the cocoa and rum flavor (it's the only one I've tried). It's got a great mouthfeel, would turn any brownie into a gourmet delight, and it just unusual and complex enough to take well above run of the mill chocolate spreads.
