The Italians call this knife a coltello per Parmigiano and use it to pry apart chunks of Parmigiano Reggiano. It is one of three knives used when cutting an 80-pound wheel of Italy’s most famous cheese into more manageable pieces. The first knife used has a hook-shaped blade and is used to score the outside of the wheel. The second knife is longer and pointed on the end. It is used to pierce the cheese at intervals along the initial scoring. The third knife is the one that we sell, which is the one used most frequently at home. In a cheese shop, it is used to work the two halves of the cheese apart after the work of the first two knives is done. It is also used to chip away smaller pieces or to cut smaller wedges.     Yes, I would recommend this to a friend

    I saw these knives being used at cheese factories in Parma Italy by the cheese masters themselves. The knife is functional for larger chunks of hard cheese, especially Parmagiano Reggiano. Other cheese knives just dont cut it.
    I am pleased with my own knife and I have given the knife as gifts to friends.
