Columela's Sherry Wine Vinegar is aged for a staggering 50 years. It is made in the time-honored traditional "solera" aging method. It is made from Palomino grapes, which are used to produce Spain's famous fine sherry. With the right conditions, the sherry slowy acidifies and becomes vinegar. The solera method involves slowly transferring younger batches of vinegar into barrels of older vinegar each year. This gently mixes older vintages with newer ones, creating a final product with a smooth, well-rounded flavor.
