This honey of Piedmont, Italy, Robinia del Canavese, also known as pseudo acacia, is very simple and direct. Smooth and light with a pleasant texture and subtle sweetness, this sun-kissed golden nectar has mild, almost ethereal floral notes.

Pseudo acacia blooms early April through May in the pristine environment of the Natural Park of Po in Piedmont. Bright white flowers filled with pale yellow pollen scent the air, attracting bees on their first forays of the season. The result is a crystal clear honey, with bright golden highlights and a fresh, delicate aroma.

Michele Gaido has been producing honeys in Piedmont since 1989. After the loss of his brother, he decided to leave his job as banker and dedicate himself completely to his passion: beekeping.

His deep knowledge of the territory and connections with small producers from the Natural Park of Po evolved into a new concept and profession. Il Miele della Vita - The Honey of Life - celebrates the connection between humans and products of the local beehives. Gaido believes this is the key component to adopting a healthier lifestyle. Oh Honey Honey
This honey has a wonderful flavor. It reminds me of the honey I use to eat as a kid. Hard to find honey with flavor anymore. Give it a try and judge for yourself.It does crytallize but warm it a little and it disappears. Not a problem at all.

Excellent and delicate flavor.
This honey is very nice. It has a smooth flavor with a hint of cranberry in it. It is not overwhelmingly sweet, but has a lovely, delicate taste.

Rich Cranberry Bog Honey
This honey,along with Greek Fir of Vytina, Borage from New Zealand,Sourgum,Ohia Lehua from Hawaii,has a very rich,complex yet light taste which lingers.Utterly fantastic and unbelievable!

As a huge fan of different honeys I was impressed with versatility and unique flavor of this remarkable honey. Great for drizzling on steamed veggies, grilled seafood and of course cheeses, especially blue and goat. I used this the other night over pan-seared sea scallops and it was heavenly. Looking forward to using over the Thanksiving holiday! MMM

Not That Interesting!
I have a culinary degree, but don't work in that field so I only get to cook for myself and family/friends. I get "fixated" on certain areas of cooking, and now it's baking "mostly bread." Honey can add SO MUCH background flavor, if it truly takes on a lot of the flavor of wherever the bees gather their nectar. I did not pick up the first note of cranberry; however, the texture was not thin and the honey was not completely tasteless. I would call it a very, sweet honey with a thick/heavy texture.
