This burnt red-hued brick of a cheese hails from Sweden. Made with unpasteurized, organic cow's milk and aged for 28 months while receiving regular saltwater washes through its aging period (this gives the rind its brick-like color, Tegel means "brick"), the end result is rich and aromatic, dense with slightly sharp, gruyere-like nuances, making this a very special cheese indeed. We love it on its own, sliced thinly with a glass of beer or wine. This powerhouse melts well too, so use it in your casseroles, gratins, or simply melted on warm asparagus or broccoli or serve wafer thin or grated over salads.

Almnäs Tegel has been made since 2008, when Thomas Berglund returned from Switzerland to his grandfather's farm located on the west coast of Sweden's second largest lake, Lake Vättern in the county of Västra Götaland. Formerly the home of artisanal workshops and a brick factory, the estate was eventually bought by Thomas' grandfather who turned it into a cheese facory. They produced Wrångebäck Sweden, the country’s first officially registered cheese, until 1961. Today, Thomas Berglund and his expert cheesemaker Elisabeth Andersson and her assistant Thomas Nolberger at Almnäs Bruk have revived this certified organic farm. Almnäs Tegel is made with milk from their herd of 400 Holstein cows. After 19 hours of pressing, these square blocks of cheese are then imprinted with four footprints as a homage to the symbol of the original brick factory the estate was home to back in the 18th century. (When the bricks were laid out to dry, shoeless children would run over them and leave their footprints in the bricks. This became their logo!)

Not so much
Was a little disappointed with this one. Ok for grating but not so much if you just want a nice piece of cheese to eat

Almas Tegel Raw Milk Cheese is ~~~simply put~~~absolutely delicious! I am wild about cheese made from raw, (cow's) milk, and this one is a new favorite. I highly recommend it!

Stellar! Dense, nutty and chock full of tyrosine crystals. A superb alpine style without the obnoxious funk. Similar to Sbrinz, recommend highly!
