From the masters of traditional seafood come these authentic sardines in olive oil from Ortiz. These sardines (species Sardina Pilchardus) are preserved in the traditional antigua method, starting with fresh sardines caught during the coastal fishing season. The sardines are cleaned by hand, one by one, and fried in virgin olive oil. Preserved pilchards, like Ortiz's Family Reserva white tuna, have a flavor which improves with the years, becoming more tender and delicate. As with good wine, these sardines can be stored in a "cellar", as their quality and flavor improves over time, although this process is often only associated with French sardines. We love these high-quality sardines served simply with bread and a few capers, or on a green salad with a sharp vinaigrette.
