From the masters of traditional seafood come these authentic anchovies in olive oil from Ortiz. These anchovies are preserved in the traditional antigua method, starting with fresh anchovies caught during the coastal fishing season. The anchovies are cleaned by hand, one by one, and fried in virgin olive oil. Preserved anchovies, like Ortiz's Family Reserva white tuna, have a flavor which improves with the years, becoming more tender and delicate. As with good wine, these anchovies can be stored in a "cellar", as their quality and flavor improves over time, although this process is often only associated with French anchovies. We love these high-quality anchovies served simply with bread and a few capers, or on a green salad with a sharp vinaigrette.
