A genuine cheese from the La Mancha region, this artisan Manchego originates on small Spanish hillsides where La Mancha sheep flocks graze. The small-scale, artisan production of this Manchego by Dehesa de los Llanos yields an exquisite cheese that is hand-formed, wrapped, and salted over a 24 hour period. Dry cured for one year in an eighteenth century cave, this Manchego has a robust flavor reminiscent of the Mancha countryside. Enjoy it as the locals do - served before the meal, topped with a spot of membrillo (Spanish quince paste). Also lovely when dipped in honey.

Excellent Cheese!
Creamy taste, firm texture, slightly clumbly but did not lack moisture. Great when paired with a good quality Sherry and a little quince paste.

A solid Manchego
This is a good manchego, to be sure! It has a piquance, but it is not overwhelming. There is blend of aged cheese, with the earthiness that a Manchego brings, but countered by the slight saltiness. I agree with the description. A little touch of honey really brings this cheese to life!

Full, sharp.
Notable, strong taste, probably for a real cheese lover. Must be experienced and open. Use in mixing cheeses for cooking.

Artisan Raw-Milk Manchego 1 Year
Loved the cheese. I had a co-worker recommend it for a holiday event and I love it. I would suggest it this to others with the addition of crackers.

The best cheese ever!!!
Try it at room temperature and with a glass of red wine and you are in HEAVEN!!!! Absolutely fantastic and willl definetely order again!!!
