Produced in the Po Valley near Treviso, Asiago Pressato is a milder, sweeter Asiago with a springy, pale interior. It is classified as an Italian DOC (Denominiazione di Origine Controllata) cheese, meaning that it is protected by governmental standards regarding the cheese's origin and techniques. Made from pasteurized whole milk and aged for 20 to 40 days, this young cheese has a full, creamy flavor. We suggest enjoying Pressato with crusty Italian bread and a glass of Pinot Grigio!

Different from other Asiago cheeses
Other Asiago cheeses seem better to me than Pressato. This was rather strongly tart. I ate it but would not reorder, will stick with another kind of Asiago. Description of Trugole says it is similar, but Trugole is very creamy/bland, for melting more then noshing.

Absolutely wonderful.
I served this cheese to guests using the recommendations from the igourmet site. We had this truly splendid cheese with hard crusty italian bread and our favorite Pinot Grigio. It was absolutely wonderfu, and our guests could not believe the unique flavor and texture of this truly splendid cheese. I highly recommend it as an appetizer with your favorite Pinot.

Highly recommend this product
I use this product primarily as an hors d'oeuvre or for stuffing panini, meats and making Italian frico (grated potato and cheese pancake).

This cheese is delicious!!
We tasted this cheese recently at WDW/Epcot Wine&Food Festival at the igourmet booth SEVERAL TIMES! The 3 cheeses that were available were wonderful-and their selection is what led us to purchase them thru igourmet. The asiago was my favorite-creamy,tasty & a perfect introduction to gourmet cheeses.
