This reserve stock, slow-ripened Asiago is aged for a full year as opposed to regular Asiago d'Allevo's six month span. As a result of the additional maturation, this cheese takes on a distinct but pleasant sharpness with hints of butterscotch. Its texture is firm enough to grate, yet allows it to be served as a delicious table cheese as well. We recommend this cheese as part of a traditional northern Italian meal, grated over risotto, polenta, or pasta.

Exquisite!
My sister sent me a box of goodies from igourmet, including Asiago d'Allevo Oro del Tempo, sharp cheddar, Jana's Valley sweet cream butter, etc. The cheeses in this package, indeed every item included, surpassed expectation. I've never tasted such delicious foods before. I'd recommend igourmet to everyone. They package their deliveries neatly in a small styrofoam container, with cold packs. Nothing is jostled or broken. Everything is fresh.

Super Asiago
This last order was perfect--but the first time I ordered, it was so dried out that it took a meat cleaver to cut it. Couldn't even grate it or grind it in the Cuisinart. I threw it out and reluctantly decided to try it just one more time because it's a favorite of mine. I'm glad I did, and I should have asked for a refund for the first order to keep others from making my mistake.

Outstanding Cheese - was gone from the house in 24 hours!
This is a must have cheese in the fridge. We purchased for a gourmet dinner club and it was devoured...it brought back memories for one of our European friends who used to eat the same cheese growing up in Italy.

So yummy.
Love the creaminess of this cheese. Asiago melts so wonderfully anyway, but this selection is really yummy. We use this in our manicotti and melted over tortillas. So good.

Asiago d'Allevo Oro del Tempo
I use grated cheese a lot in cooking and on various dishes. This is the first time I have tried this brand and found it to be very tasty. It was a bit difficult to grate; I might try the less aged one next.
