Each year, Israel has two to three blossom seasons when the bees suck the nectar from more than one hundred types of plants, starting off the hive's fascinating production process. The honey gathered from Avocado groves that are grown in the northern portion of Israel is rich in vitamins and minerals. It has a unique dark amber color and a distinctive aroma, smelling like brown sugar, molasses, citrus, and pumpernickel bread. This pure honey is perfect for spreading on goat's milk cheese, or using to create a glaze for lamb or duck. Since this is a natural, raw honey, it will crystallize over time or at cooler temperatures. To return this honey to a liquid state, simply heat the jar in warm water, stirring to smooth the texture.
