This brie-like blue cheese from Denmark is now made by a Danish-owned factory in the United States. Blue Castello is richer than its cousin, Saga Blue, which is also made in the United States. Castello is a distant derivative of Italian Gorgonzola but has a higher fat content and a milder flavor. It is a perfect blue for those who like a little blue flavor without being blown away.

Favorite of the blue cheeses
This is a really smooth and silky blue cheese. It has almost a buttery feel to it. Our family's favorite blue.

Blue Castello
We received a cheese that was labeled Blue Castello; however it didn't look or taste like Blue Castello. It was mostly like a triple cream cheese, with very little blue cheese. Definitely did not look like the picture. It was a good cheese, but was NOT Blue Castello. Very disappointing.

Blue Costello
We have enjoyed Blue Costello for years. However, this piece is unlike all we have tried in the past. Must have been made by another Danish company or different formulation. Not triple cream, much less flavor and very little veins. Not the same! All the other cheese ordered were fine!

No, it's still a blue.
As someone who normally loathes blue cheese except for the dressing, I was intrigued by the description of this, and decided to give it a try -- knowing my blue-loving spouse would devour it if I didn't like it. Well, that's exactly what happened. This cheese is marvelously creamy, buttery, and spreadable. It's beautiful in appearance. It melts in your mouth. It? Is still a blue, with all of a blue's musky qualities. If you don't like that, don't buy this cheese. *Lovers* of blue cheese, however, will appreciate the semi-solid mushroom-y veins of mold and the way the butteriness of the paste and the typical bitterness of blue cheese culture play off one another.

Bleu Castello
If you think you don't like blue cheese -- try this; simply delicious served with fruit and a variety of crackers on a cheese plate to finish a meal.

Wonderfully creamy blue!
I love all blue cheeses, and love each of them differently. This one is exceptionally creamy, and mild enough that even some folks who don't generally like blue cheese may enjoy it.
