Boschetto al Tartufo Bianchetto is about as amazing as a cheese gets. Our friends at Il Forteto in Mugello have now created another outstanding version, aged for four months. Instead of a blend of sheep and cow milk, Stagionato is made from pure sheep's milk. The master cheese maker at Il Forteto has still maintained a precious harmony between the pronounced, pungent taste of the extremely scarce (and expensive) white truffle and pure sheep's milk. The scent and flavor will still bowl you over with delight. The base is firmer and drier, so it's easier to add a dash of truffle flavor to your favorite dishes. If you love our original Boschetto as much as we do, the Stagionato version is a must try.

Decadent, full pleasure cheese. Such a treat.
The creamy, satiny texture and the full, round flavor are practically addictive (best at room temp). I came back here to order more of this incredibly delicious cheese and was not surprised to see that it is out of stock. I'm on the waiting list for more!

Different
Ordered many times before. Always good and unique. Just the right amount of flavor. Tried it on a whim and baked it on pizza. It was great. It brought out more flavor and others were impressed on how great it tasted.

Truffle goodness
Fantastic white truffle cheese. Goes well with many white and lighter red wines. The cheese is hard enough to shave on most anything, especially pasta dishes.

Earthy Goodness!
The first time I had this, I fell in love--and I'm not usually big on the flavor of truffles. But somehow in this context, it works magic!

Our favorite cheese
My wife and I have been enjoying this cheese since we first discovered it, and it never fails to disappoint. The base taste is similar to asiago, though not as sharp. Then it's kicked up with the truffles !

Wonderful for the Lactose Intolerant!!
We have ordered the cow/sheep version of this a long time, and recently ordered this full sheep's milk for our college age son,who is lactose intolerant. It made his Christmas this year. He could have cheese and crackers with the rest of us!! Thank you , igourmet!!
