Brick Cheese
Founded in 1885 by five dairy farmers, Chalet Cheese Cooperative continues to flourish as a cooperative, owned and operated by its 29 members. They specialize in the making of Limburger, Brick and Baby Swiss, with an emphasis on top quality and true workmanship. They are the only producers of Limburger in the United States, and their German Brick with a Limburger smear underscores their spirit for innovation.
Brick is the oldest cheese type to have originated in the USA, first created in 1875 by John Jossi, a native of Switzerland living in Lebanon, Wisconsin. Myron Olson has been crafting cheese for over 30 years and is the manager of Chalet Cheese Cooperative Brick where he makes this Wisconsin original. Flavor changes from mild and sweet, with a touch of nuttiness when young to pungent and tangy when aged. Brick is surface-ripened with a smooth, open texture. We offer the
aged Brick cheese, which has a stronger flavor
than young brick. A great cheese for fans of limburger, beerkase, or liederkranz. Slice for sandwiches; shred for casseroles.
Made from pasteurized cow's milk.

Perfect, But MILD Brick!
I've been searching in vain for a "mild" brick, but up until now have only come across the "aged". Decided to give this one a try anyway, & lo & behold, it was the exact "mild" I've been looking for since I bought it from Wisconsin farmhouses. If you're looking for aged brick though, this one isn't it.

Just What I Remembered
Unable to find brick cheese anywhere in the 26 years I've lived on the East Coast, my search for it happily found igourmet.com. My husband and I loved what you sent -- mild, but with just the right amount of tang.

Gave as a present
My mother-in-law kept talking about brick cheese. She could not find it any longer in supermarkets and all the local hickory farms or similar cheese stores are gone in our area. I didn't taste it but she was very happy with it. The order came very quickly and the packaging and insulated container was great.

Very satisfying
I have a very picky, high maintenance friend who constantly bemoaned not being able to find Brick cheese anywhere, so I went online and found this sight. SHE LOVED IT, SHE INHALED IT. You guys are definitely on my gift list.

Very Dissapointed in the Cheese
I don't know if the cheese is just poor quality or it is the "red, wet" rind that coats the cheese, but it tasted awful...nothing like the cheese I grew up on in Wisconsin.

Best Brick Ever
This is my second order of this brick. I'm so glad I've been smart enough to order a couple each time. The blocks make great gifts for cheese-lovers and I have one to enjoy myself...and I do. So bright and smooth it goes with anything, including another slice of brick.

Too smelly at first, but good
I wasn't familiar with Brick Cheese when I bought this and the initial smell upon opening the package of the stinky stuff was a little scary and off-putting. However, since re-wrapping and getting it out again, it's growing on me. Those new to stinky cheese (like me) should be sure to not blow it off at first smell :)
