This wonderful goat's milk cheese, from Poitou in the Loire Valley, comes to us in handcrafted wooden crates containing two, four-pound logs of the most exquisite chevre we have ever tasted! Each Buche de Chevre is aged for two months, during which time it develops a hard, edible crust complete with a bloomy white mold coating. It is sharp and tangy near the rind and gets progressively richer and creamier toward the center. When enjoying this cheese, you savor a delightful combination of flavors and textures in each bite. Buche de Chevre is a true delicacy that begs for a warm, crusty French baguette and a glass of robust red wine from neighboring Bordeaux, or a crisp White from the Loire Valley.

Goat-tastic!
Excellent! Much like Humboldt Fog, but with a bit more citrus and less mushroom flavor. Tonight I had this sliced and spread on hearty white bread. Quite nice. I'm sure it would also be fantastic straight off a knife. Incidentally, mine was an end piece, so had more rind than would a middle section, but that just adds more 'spiciness', which I enjoy. The slice is circular, 3.5 inches across and about 1.25 inches in height. The gooey section between rind and center was about half an inch, which seems to be a good ratio.

This one was interesting , very intense flavor that got mixed reviews at my house. I liked it, but the ladies thought it was too strong. I made a bechamel sauce with half of it. Everybody loved it

Very different and tasty
This is the only goat cheese that I ever had that gets ripe as it ages. The taste completely changes depending on where you slice, with a edible crust, regular goat cheese in the center, and when ripe, the edges can have a texture almost like brie (with a huge change in flavor). Wonderful with wine. Wait for this to get a little ripe, you will be glad you did!
