In 1978, Colin Beer was awarded a Churchill Fellowship to study game bird breeding in Europe and America. This enabled him to establish a retail farm shop which evolved into the Pheasant Farm Restaurant. His wife Maggie had become an expert game chef and so started a culinary career that has spanned over 25 years. The award-winning Pheasant Farm Restaurant was designated the 1991 Remy Martin Cognac/Australian Gourmet Traveller Restaurant of the Year.

Maggie Beer products come from Tanunda, in the heart of the famous Barossa Valley in Australia. Their fresh-tasting, fruity jams are a Barossa food tradition.

We've selected their unique Burnt Fig Jam<, a favorite from Colin's childhood. His mother always burned her fig jam, not by design, but from distraction. He always preferred the burnt version to the normal. It was quite difficult to replicate this distinctive flavor in commercial quantities, but they've succeeded and the result is the thickest, fruitiest jam you can buy. They simply reduce the figs with no water at all, then add sugar and cook the lot until burnt to perfection before accenting the jam with a little lemon juice. Serve on crusty bread with a dollop of creme fraiche.

Balance
I'm hesitant to say I dont like this product, but too me, the balance just wasnt there. Too much burnt and not enough fruit for me.

A revelation in Jam
My mother makes a burned caramel sauce for her flan so this burnt fig jam brought me right back to my own childhood. I instantly loved the contrast of sticky sweet ripe figs and the burnt bitterness. I spread the jam over good crackers and top with gorgonzola, also good with goat cheese. Love love love it!

ultimate fig heaven
a friend who loves fig jams has tried them from all over the world, says this is by far the best--I have never liked fig jam til this although i love ripe figs--ice cream made with this has a complex dulce de leche flavor better than anyones, needs less than a jar for a full quart, plus it adds to many recipes to where we keep several jars in the pantry always

Simply Delicious Jam
This jam is amazing - not too sweet, just tastes of perfectly ripe fruit - complex and savory. Perfect on warm biscuits with butter, or with a soft cheese and walnuts.

Figgy Goodness
If you like figs this is a must have. It tastes awesome, like figs to the extreme in a really good way.

A unique experience.
Unlike most fig preserves, this was not too sweet for me.It pairs beautifully with cheeses, particularly the sharp cheddars and also (my favorite) with caerphilly.
