Burrata originated from a small area of the region of Apulia, called Murgia. First produced around 1920 on the Bianchini farm in the town of Andria, (about 2/3 of the way up from Italy's heel to the spur of Apulia). In the 1950s, it became more widely available after a few of the local cheese factories - notably Chieppa - began producing it. It is generally suspected that factories were interested in it because it was a way to utilize the ritagli ("scraps" or "rags") of mozzarella.

The family-owned Di Stefano dairy is based in Southern California and is dedicated to making only one product: Di Stefano burrata! Their burrata is hand made with extreme care, passion, and dedication. On the plate this pure, sweet fresh cheese resembles nothing more than a ball of cow's milk mozzarella with a topknot. Once the cheese has been cut open the soft and creamy center slowly runs onto the plate. A luscious filling of stracciatelle blended with Italian panna ("cream") is encased in a sheet of fresh mozzarella. Like jewels in a drawstring pouch -- a little ball with a big surprise inside - delicate, delicious and very decadent! This product is steeped in Italian tradition, even using cream imported from Italy for the filling.

Fresh burrata should be served at room temperature. If it is too cold, the creamy filling becomes solid and hard and lacks that essential lusciousness.

Excellent Burrata!!
I order this at several Italian Restaurants and was very surprised at the Burrata I received from igourmet.com. I accompanied it with roasted tomatoes, grilled ciabatta bread, a little pesto and drizzled olive oil. Yummy!Will definately order this Burrata again!

Mmm, creamy goodness
Fresh, with a lushly creamy interior and an exterior that is just the right consistency-soft, slightly springy, but not tough or chewy. Delicate flavor.

Excellent !
This burrata is so fresh and delicious. It was a bit "liquidy" and had to serve it in a bowl. Everyone kept remarking, with each bite about how delicious it is. a definite winner.

We loved it!
We travel to the Amalfi coast, Positano, every year and burrata is the 1st thing we have to have. In Atlanta the only way we can get Italian burrata is to order it from [ ]. We recently found this burrata at [ ] so we tried it. It was so, so good!!! Give it a try.

Fantastic Burrata
Di Stefano is a fantastic Burrata, but beware. I ordered 3 of the Burrata alla Panna by Di Stefano and received 1 Burrata alla Panna by Di Stefano and 2 Burrata alla Panna from an Italian Company. The Italian Burrata was not as fresh, and was much "thicker" skinned. It was definately not as creamy as the Di Stefano brand either. I very highly recommend Di Stefano, but beg igourmet.com to please not send another brand when the Di Stefano is ordered. Thanks in advance!!!

Worst cheese I have ever eaten!
This cheese had no flavor. It was bland.
